Shropshire blue is a semi-hard blue cheese, often described as a cross between a Cheshire and a Stilton. Over a period of around 12 weeks it forms a natural, light brown rind. The cheese itself has a smooth texture with a strong flavour and a tangy aroma. The orange colour comes from the addition of annatto.
