Caerphilly

A hard variety that originated in the Welsh town of Caerphilly. These days Traditional Welsh Caerphilly is protected by European PGI status. The cheese itself is light coloured with a crumbly texture, similar to a Wensleydale, with a mild taste and a hint of lemon.
